Ok I'm starting with one of my favourite, creative ways to serve up watermelon. As a cake! The whole cake part is made up of watermelon decorated with whipped cream and berries. And trust me, on a hot day when you bring this watermelon cake out people will think you've split the atom it's that fun and delicious!
My favourite thing for breakfast in Sicily was granita and cream and with a bit of forethought you could be experiencing your own Sicilian breakfast at home! You can whip up granita in just 5 minutes using any seasonal fruit you have on hand. It also works wonderfully with frozen fruit straight from the supermarket! This is a must-try recipe, and I hope you’ll give it a go at least once.
This Balkan watermelon rind jam makes a delicious use out of a part of the watermelon that is usually discarded!
