Apple Slice

This Apple Crumble Slice is simplicity itself. Made using bought biscuits or cookies it comes together in no time at all. There's nothing more pleasing that an easily sharable slice for a lunchbox or after a main. And while we used stewed, fresh apples you could also avail yourself of tinned apple filling to make it even easier! It can be easily made in the Thermomix too!

When I was thinking of what to bake for Father's Day I thought of this apple slice. Because fathers are often classics and more often than not, have a sweet tooth (at least in my experience). This was made for Mr NQN this Father's Day because he happens to love cooked apples. The fact that it was easy to make was simply a bonus for me!

Tips For Making Apple Crumble Slice

1 - We use two different types of cookies for this: Biscoff cookies for the base and ANZAC biscuits for the crumble topping.

2 - The base: I love using Biscoff cookies for the base because they've got so much flavour and spice to them. You can also replace half of the Biscoff cookies with gingernut cookies too as ginger and apples go so well together.

3 - The topping: ANZAC biscuits are absolutely perfect for a crumble topping as they're pretty much like an oat crumble already! If you do feel like making them from scratch here is my ANZAC biscuit recipe. If you are outside of Australia and New Zealand, any other sort of oatmeal cookie works well as the crumble (or you can make your ANZAC biscuits, I promise they're delicious!).

4 -The filling: is stewed apples. When I stew apples I don't add any water to them because I don't want the apples to be too wet. Once they start cooking, apples release liquid and as long as the temperature isn't too high and you keep the lid on for most of the time. You can also use apple sauce for this.

5 - This recipe can be done in the Thermomix too from the base, filling and topping.

6 - UPGRADE: use browned butter instead of melted butter. It makes them next level delicious!

7 - Important: refrigerate the slice for at least 2 hours before cutting. This slice will fall apart if you cut it straight away.

8 - This slice can be stored for up to 5 days in the fridge in an airtight container.

Every night after dinner I have a little ritual. I have a bite of something sweet, either chocolate or when I had this apple crumble slice I ate some of that. I then make myself a bottle of sparkling water and take it upstairs. Then I go into the bathroom and put on tiktok and watch it while I'm brushing my teeth, taking my makeup off and having a shower. I didn't realise that this was a thing until I went away with Laura and we shared a bathroom and she also does the same thing! I even have a little stand for my phone haha.

While I would never scroll Instagram because it has such an annoying algorithm but I like TikTok's much better because it shows me what I like to see and for me that's true crime, happy animal video. Recently I was also thrilled to enter black TikTok. It's not a set space, but it's when you see a lot of black TikTok creators and damn they are smart and take no BS. I feel like I'm in a hallowed space.

The world of TikTok is also where so many trends are started. Monica recently asked me. "What is all this demure stuff?" and I explained to her that it started with a Tiktoker Jools Lebron that made a video showing how she goes to work demure, mindful and cutesy and without a green cut crease. It also turns out lots of people don't know what the word demure means.

"What's a green cut crease?" she then asked and I explained that it was an eye make up technique. "I'll be your TikTokTranslator!" I offered her.

Preparation time: 15 minutes

Cooking time: 15 minutes

Makes 12 slices or bars

  • 250g/8.8ozs Biscoff cookies
  • 80g/2.8ozs melted butter
  • 660g/1.5lbs apples, peeled and cored
  • 60g/2ozs white sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla bean paste
  • 200g/7ozs ANZAC biscuits
  • 2 tablespoons Biscoff spread

Step 1 - Line a 18x27cm/7x10.6inch baking tray with parchment. Process the Biscoff cookies until very fine and mix with the melted butter and press down into the base of the tin. Refrigerate while you do the rest.

Step 2 -Preheat oven to 160C/320F fan forced. Chop the apples roughly and then place in a saucepan with the sugar and cinnamon. Cook until soft, around 8-10 minutes and then add the vanilla. You can leave some chunks of apple just for a bit of texture. Spread the apple mixture on top of the biscuit base.

Step 3 -Then roughly crumble the ANZAC biscuits to get granola style chunks and scatter on top of the apple. Bake for 15 minutes. Heat the Biscoff spread on medium heat in the microwave for 20 seconds or so until liquid. Drizzle on top of the slice. IMPORTANT: refrigerate for 2 hours before cutting. This slice will fall apart if you cut it straight away.

Thermomix Directions

Step 1 - Line a 18x27cm/7x10.6inch baking tray with parchment. Place the Biscoff cookies in the TM bowl and set to 10 seconds speed #7 until very fine and mix with the melted butter and press down into the base of the tin. Refrigerate while you do the rest.

Step 2 -Preheat oven to 160C/320F fan forced. Chop the apples roughly and then place in the TM bowl with the sugar and cinnamon. Set to 15 minutes, 115C, speed #2 and once soft, add the vanilla. You can leave some chunks of apple just for a bit of texture. Spread the apple mixture on top of the biscuit base.

Step 3 -Place the ANZAC biscuits in the TM bowl for 10 seconds, speed #4 to get granola style chunks and scatter on top of the apple. Bake for 15 minutes. Heat the Biscoff spread on medium heat in the microwave for 20 seconds or so until liquid. Drizzle on top of the slice. IMPORTANT: refrigerate for 2 hours before cutting. This slice will fall apart if you cut it straight away.
