One of the must haves at a Christmas in the Southern Hemisphere is salad. It's the height of summer and salad just suits our climate perfectly. This Peach Tomato Caprese Salad also answers a couple of other themes. It looks like the Italian flag while also echoing Christmas colours. It also makes use of delicious peaches and stone fruit we have during this season! You could also serve this in the shape of a wreath or a candy cane!

2x100g/3.5oz Mozzarella balls, sliced as thick as the tomatoes.
2 peaches, sliced thinly
1/4 cup fresh basil leaves
4 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
Salt and pepper
Step 1 - Layer sliced tomatoes, mozzarella and peaches in a circular wreath pattern. Whisk the balsamic vinegar with the oil and drizzle on top. Season with salt and pepper and add basil leaves.
