When I recently posted that I thought that Hermit Cookies were in my top 5 of cookie lots of readers asked me what other cookies were in my top 5 list. I thought long and hard about it because cookies are important and the question requires deep thought. And after a couple of weeks of cookie contemplation I've come up with my top 5 list of cookies - except in two parts so it's my top 10 cookies because it's hard to choose just 5! Here is part 1.
Everyone needs a great shortbread recipe in their life and this recipe was gifted to me from a talented home cook from New Zealand called Julie that came over for Christmas dinner one year. She never gives out recipes but I'm so glad that she made an exception for this. I added some chopped pistachios and dipped them in white chocolate and added some Turkish delight!
This recipe is actually from a cafe called Grandma's Little Bakery. When I first tried their pistachio biscotti I was blown away and they kindly gave me their precious recipe. Prior to trying these pistachio biscotti I could take or leave biscotti but this pistachio biscotti should come with a warning that you won't be able to stop eating them!
This is another New Zealand recipe. Afghans are one of my favourite ever biscuit or cookie although you rarely hear about them outside of New Zealand. They've got a delicious moreishness thanks to the addition of a secret but easy to find ingredient!
Ahh yes the unassuming, slightly plain looking hermit cookie with the intriguing name. What can I say but I could not stop eating them and they felt like a perfect cross between healthy and delicious!
Swedish bakes are some of the best bakes of all time and it stands to reason that their cookies are excellent too. I first tried these at Ikea and was so smitten by them that I had to make some at home. They're so wholesome and delicious and you can use your favourite chocolate in these too!
