As vegetable prices in Australia soar for certain vegetables and supply dwindles there's no need to forego the goodness of vegetables. May I offer you these 5 recipes all using vegetables that are either inexpensive, seasonal, frozen or tinned! There is a wonderful Mexican chicken soup or bacon and cheese stuffed rosti or try exquisite Esquites (Mexican corn salad), a chicken pot pie made with tinned and frozen vegetables or a four bean salad using tinned beans!
This Oaxacan Mexican chicken soup is one of my favourite versions of chicken soup. With the flavours of oregano, black pepper, lime and chilli it uses carrots and a tin of tomatoes to create a chicken soup that is definitely good for the soul.
Hooray! Potatoes are plentiful and in season (I mean could you imagine going through winter without potatoes? THE HORROR!). This potato rosti is what dreams are made of. It his stuffed with bacon and cheese and will make you forget about lettuce prices.
I usually make this corn salad with fresh corn but Dear Readers pointed out how good it is made with tinned corn! And when you use tinned corn it cuts down the prep time considerably. This Mexican Esquites or elote en vasoor is dressed in a garlic lime crema dressing with crumbled cheese. It's one of my favourite ever things to make with corn!
Frozen peas and tinned corn have never tasted this good-pinkie swear! This chicken pot pie has 4 cups of vegetables (you can replace the zucchini with more peas, corn and carrots) and I promise the first time you make it won't be your last.
OK this is a fast and dirty recipe and if you're looking for a fast, nutritious lunch then you might just love this working from home 4 bean salad using tinned beans and lots of flavours! Don't knock it til you try it ;)
