This also works a dream with bags of frozen fruit from the supermarket freezer! This is a pushy recipe and I hope you'll try this at least once!
With the seasonal stone and summer fruit ebbing away, fruit granitas are the best way to preserve the memory of blushing, ripe fruit. For the last few months I've been freezing and blending away my summer fruit for those up and down hot and cold days of summer rollercoaster weather.
I know that last month I shared my recipe for blackberry granita but this easy granita recipe bears repeating. I know that you can make a syrup, blend the fruit and then freeze and go at it with a fork as if you were mercilessly angry at it but this is markedly easier.
A word of warning: don't add any liquid or syrup to granita, otherwise you will end up with a sorbet which is really the most delicious sort of consolation prize. But if you're looking for those icy shards to melt on your tongue rather than the slippery gloriousness of sorbet, then avoid adding anything liquid. All you have to do is freeze your fruit in small pieces and then blend with icing sugar and ice cubes. That's it.
And I'm about to make your day even sweeter. Frozen granita stays in icy shards (if made properly). It only needs a little gentle encouragement from a fork to dislodge it, a gentle prod from the side of the stage and the granita is ready for show time which makes it perfect for a make-ahead dessert for a dinner party.
Serve granita with cream or without, it's your choice or let your guests decide. Some flavours really benefit from the cream like peaches and strawberries, while others are sublime as is, like watermelon!
