Dear Reader Jaqi strikes again! She kindly gave me a jar of her mum Gilli's zucchini pickles and they were so good that I asked her for the recipe. They're the perfect balance of sweet and salty!
Ok this looks hard but it mainly requires a bit of patience. Thin ribbons of eggplant, zucchini and carrots are twirled around a cheese pastry base lined with baby spinach pesto and bocconcini. Eating your serves of vegetables never tasted so good!
