Easy Mango Chilli Grilled Chicken Skewers

Looking for something tasty and delicious to throw on the grill or bbq? Try these mango chilli chicken skewers. They make the perfect weeknight dinner as you can start the process in the morning and cook them at night. They go perfectly with salad or rice and are deceptively simple!

Truthfully I didn't expect a lot. To me, at first sight, there were too few ingredients in this to make it full flavoured and tasty. I was wrong. We could not stop eating these.

There are certain foods I cannot get enough of. Peanut butter is one and today we had this interaction:

Me: "OMG you have to try this French peanut butter. It's got crunchy feuilletine bits in it!" handing him a tiny hotel breakfast jar of peanut butter that I took from the St Regis in Dubai.

Mr Nqn: "I don't feel like it..."

Me: "Here, just eat it. Except just eat half of the jar please. It's 40 grams so leave me exactly 20 grams please."

You can also probably tell that I plough through life a bit like a bull in a china shop (I am a Taurean after all). Even though he didn't want some, I sort of really made Mr NQN eat it. And I'm going to show the same degree of pushiness with this recipe Dear Reader. I'm going to say that you just have to make it because it's that damn good.

So while I am unable to resist peanut butter Mr NQN was unable to resist these chicken skewers once he tried one. I gave him a plate with five of them. He asked for more and I gave him the rest that I had cooked and he would have kept eating if I had made more! I felt a bit like I was feeding a hungry crocodile. Don't say you weren't warned my lovelies ;)

Makes 10-12 skewers

An Original Recipe by Lorraine Elliott

Preparation time: 15 minutes

Cooking time: 10 minutes

  • 4 skinless chicken thigh fillets
  • 2 cloves garlic, peeled and chopped
  • 2 tablespoons finely grated fresh ginger
  • 2 tablespoons soy sauce
  • 1 teaspoon honey
  • 1 teaspoon turmeric
  • Oil for drizzling
  • Flesh from 2 mango cheeks (around 1 cup)
  • 2 tablespoons chilli garlic sauce

Mango Chilli Chicken

Step 1 - Soak wooden skewers in a bowl of water. Cut the chicken thighs into long strips. Marinate with the garlic, ginger, soy sauce, honey and turmeric for 30 minutes or you can leave this in the fridge all day and just cook them when you get home.

Step 2 - Blend the mango meat and the chilli garlic sauce. Reserve 1/2 cup out of the total sauce.

Step 3 - Preheat grill to very hot and line a tray with foil and brush with oil. Thread the chicken onto the skewers and place on the prepared tray. Brush with the 1/2 cup mango chilli sauce and drizzle with oil. Grill until caramelised and you get charred bits. Serve with extra mango chilli sauce.
