Looking for a beautiful but easy idea for Mother's Day breakfast? Then this fig parfait is the perfect idea for something delicious and special enough to serve. The whole thing is made in 5 minutes (or less) and is a lightly sweetened fruity, tropical combination made with luscious late season figs and creamy yogurt!
I love experimenting with different combinations based on what we have bought and I came up with this when I was making Mr NQN's lunch. I pack him a bit of breakfast in his work lunch and I began mixing a few things together and when I tried it I realised what a killer combination it was. But I was hesitant to share it with you. I wasn't sure if it was too easy and I worried that you Dear Reader would think that this is the same as avocado on toast!
A wise man once told me the best way to buy a property was to turn the engine and phones off and listen and look. If there is no noise and no shadow, then you've found the right place. He had a beautiful farm in the country and while we live in pretty much the opposite situation, I can appreciate the logic. We live on one of the noisiest roads in Sydney where there is a light rail being built.
So whilst there is never an absence of light or noise, our little fig tree Scheherazade (thanks Robbie for the name suggestion!) still grows producing the most beautiful, luscious petite sized black genoa figs. She will eventually have to go to my parents' house because she can't live on an apartment balcony but it has been a real treat to be able to grow something and keep it alive (apart from aloe vera and some real survivors we've killed everything). And we used the figs that came from our tree in this parfait. And nothing tastes quite as good as something you've grown yourself (and managed to keep alive)!
