A toasted cheese sandwich that is all flipped around? This has to be tried at least once! Especially if you prize the little crispy bits of cheese at the bottom of the frypan after making a cheese toastie. Take a peek at how to make an Inside Out Toasted Cheese Sandwich!

How to make an inside out cheese toastie

As someone that lives a lot of her life on the internet or at least attached to it, you can find some really interesting things on it. It's the quickest way to disseminate information and when I saw a link to a recipe for an Inside Out cheese toastie by chef Gregory Llewellyn from one of my favourite Sydney restaurants Hartsyard I had to try and make one for myself.

An Inside Out cheese toastie is one in which the cheese is on the outside. Yup that's right. ON THE OUTSIDE.

I know, the first instinct would be "Won't melted cheese get on your hands?". The beauty about this is that the cheese crisps up perfectly that it no longer melts. So you know those delicious little bits you get in the frypan of super crispy cheese that are like little nuggets of gold? That's the crispy cheese on the outside of the toastie.

Because I basically saw it and then went straight into the kitchen to make it I didn't have loads of fancy cheeses in my fridge. The fanciest I had was a goat's feta and I also had a block of tasty cheese from the avocado fries and cream cheese. So I decided to fill the toastie with a melting and soft cheese filling in contrast with the crispy cheese coating on the outside. And for good measure I added ham too. It was every bit as good as it sounded and the only thing I ended up adding was some tomato relish to give it a bit of acidity because it is a very rich dish indeed.

Another thing that I recently learned was the concept of selfies with T. Rex hands. That is placing your hand with your fingers bent slightly right next to your face. Apparently it is a thing with celebs and I must admit I may have done it once or twice but mainly because my hair keeps falling in front of my face and I want to move it out of the way or if I wanted to show my nails. But yes apparently it is a real thing that people are doing to make their selfies look more elegant and attractive. What do you think?

Makes 2 cheese toasties

Preparation time: 5 minutes

Cooking time: 5 minutes

  • 50g/1.7ozs. cream cheese
  • 50g/1.7ozs. goat's cheese (or another favourite cheese)
  • 1 stick spring onion
  • 4 pieces of bread spread with 2-3 tablespoons butter
  • 4 bread sized slices of tasty cheese
  • 75g/2.65ozs. ham
  • Tomato relish to serve

Inside Out Toasted Cheese Toastie

Step 1 - Process the cream cheese, goat's cheese and spring onion to make a spreadable dip. Heat a frying pan on high heat and have a large piece of parchment ready to place in it that fits the pan. Place the tasty cheese slice on the buttered side of each slice of bread. Place cheese side down so that the cheese sits on the parchment lined pan. Spread with the cream cheese mixture. Top with ham. Then top with the other slice of bread with the cheese facing up.

Step 2 - Fry until it becomes golden and then carefully turn over and cook on the other side. Serve with tomato relish.
