NQN's ghastly, ghoulish Halloween party!

How adorable are these Ghost Meringues for Halloween? These are an effective and very easy Halloween party food. All you need is some egg whites, sugar and silver cachous for the eyes! They can be made ahead of time and you can serve them with cream and "bloody" strawberry sauce for an Eton Mess too.

Ghost Meringues

Preparation time: 20 minutes

Cooking time: 25 minutes

Makes about 30 ghosts

  • 150ml/5flozs egg whites

  • 1 cup/220g/7.7ozs caster sugar

  • 1 teaspoon white vinegar

  • silver cachous for eyes

Step 1 - Preheat oven to 120C/248F. Line a baking tray with parchment. With a perfectly clean mixer and beater, beat egg whites until soft peaks form. Gradually add the caster sugar and vinegar until it becomes thick, glossy and stiff.

Placing "eyes" on ghosts

Step 2 - Place mixture in a plain 1.5cm nozzle fitted piping bag and pipe ghosts using a swirl action onto a baking tray lined with non stick paper. With tweezers place 2 cachous in place of eyes and bake for 25 minutes. When done, turn off the oven and leave to cool with the door ajar.
